Serve up healthy, crisp vegetables with this creative Easter Bunny veggie tray. It's a great way to get kids to eat vegetables and looks great on an Easter brunch buffet table.
To make the bunny vegetable tray, you'll need:
- 1 Loaf French bread
- 1 Small round of Italian Bread
- 1 Medium round of Italian Bread
- 6 Scallions
- 3 Raisins
- Veggies: Carrots, celery, broccoli, cauliflower -- any raw veggies of your choice -- washed and ready to serve
- Veggie Dip
Assembling the bunny is fun. Make the bunny ears by cutting the French bread loaf in half. Create the bunny’s belly by cutting a large circle out of the middle of the medium sized round of Italian bread. Reserve this round piece of bread as it will become the bunny's tail.
Assemble the bunny on a serving platter. Use toothpicks to attach the ears to the head (the small round of Italian bread) the rabbit’s head to its belly. Take the “tail” and turn it over so that it looks like a cute, fluffy cotton tail. Then, carve out tiny spots for the eyes and nose and fill them with raisins. Poke 3 holes on each side of the nose and insert the scallions into the holes to make whiskers.
Then just add your dip in the bunny's belly and arrange vegetables around the bunny on the tray.
